Arugula, chicken, pear and fig salad with apple spice dressing
Ingredients:
2 cups baby arugula
1/2 cooked chicken breast, cut into bite-sized pieces
2 dried figs, chopped
1/4 pear, sliced or chopped
apple spice dressing (click here for recipe)
Optional: pumpkin seeds to garnish
Directions:
Toss the arugula with desired amount of dressing. Top with remaining ingredients. Serves 1.
